⭐ July 4th Fireworks Pie

A vanilla cream pie with fresh strawberries and blueberries, topped like the American flag.


🥧 Ingredients

For the crust:

  • 1 ½ cups all-purpose flour
  • 1 tbsp sugar
  • ½ tsp salt
  • ½ cup cold unsalted butter, cubed
  • 3–5 tbsp ice water

For the filling:

  • 1 cup whole milk
  • 1 cup heavy cream
  • ⅓ cup sugar
  • 2 tbsp cornstarch
  • 2 egg yolks
  • 1 tsp vanilla extract
  • Pinch of salt

For the topping:

  • 1 cup fresh blueberries
  • 1 ½ cups sliced fresh strawberries
  • Optional: whipped cream stars or mini marshmallows for decoration


🧑‍🍳 Instructions


1. Make the crust:

  1. In a bowl, mix flour, sugar, and salt.
  2. Cut in the butter using a pastry cutter or fork until crumbly.
  3. Add ice water one spoon at a time until dough holds together.
  4. Shape into a disc, wrap, and chill for 30 minutes.
  5. Roll out and place into a 9-inch pie dish.
  6. Prick the base with a fork, then bake at 375°F (190°C) for 20–25 minutes until golden. Let cool.


2. Make the vanilla cream filling:

  1. In a saucepan, whisk sugar, cornstarch, and salt. Add milk and cream.
  2. Heat on medium until hot (do not boil), whisking constantly.
  3. In a bowl, whisk egg yolks. Slowly pour in some hot mixture to temper.
  4. Pour egg mixture back into pan and cook until thick, about 5 minutes.
  5. Remove from heat, stir in vanilla. Let cool slightly, then pour into crust. Chill for 2 hours or until firm.



3. Decorate the top:

  1. In the top left quarter, arrange blueberries in rows like a flag’s stars.
  2. In the remaining area, alternate rows of sliced strawberries for red stripes.
  3. Optional: Pipe whipped cream stars or use mini marshmallows for a festive finish.

  • Use a star-shaped cookie cutter to cut whipped topping or thin apple slices for extra flair.
  • Want a shortcut? Use a store-bought crust and premade vanilla pudding.
